Citronové cupcaky s citronovo-ricottovým frostingem / Lemon cupcakes with ricotta-lemon frosting

Za dobu nepsání na blog (to už je zase 10 dní?) jsem si stihla zničit mobil, jít 8x do práce a 2x mít volno, prožít krásný první máj, to ještě bylo v Oslu slunečně, konečně podepsat pracovní smlouvu a koupit si letenku domů. Budu doma (a na Slovensku a doufejme někde u moře) 24 dní a už teď se nemůžu dočkat.

Zítra se s Radanem a s naší kamarádkou chystáme na oslovský koncert Justina Timberlakea. Už několik let mluvím o tom, jak moc bych na jeho koncert chtěla jít a strašně se na zítřek těším. A o to víc, že ve stejný večer přiletí na pár dní moje maminka Lenička. Zítra bude úžasný den. Ale o tom se pokusím rozepsat potom.

Chci Leničku něčím potěšit a tak jsem jí upekla cupcaky. Citronové, s citronovým frostingem. Už dlouho se na něco citronové chystám, chvíli jsem uvažovala nad "lemon bars" a nebo "lemon pie", ale mě prostě baví to zdobení. I když tento konkrétní frosting moc nespolupracoval. Každopádně chuťově jsou to nejvláčnější cupcaky, jaké jsem zatím upekla. Jsou lehounké, sladké a opravdu citronové. Zkusíte?
 

 

 

 

Recept / Recipe

na 16-17 cupcaků / makes 16-17 cupcakes
doba přípravy/ preparation time: 15 + 20min
doba pečení/ baking time: 16-17min

cupcakes

180g cukru / 180g sugar
150g másla, v pokojové teplotě / 150g butter, in room temperature
1/2 hrnku kefíru / 1/2 cup kefir
kůra z jednoho citronu / zest from one lemon
3 bílky / 3 egg whites
150g "cake flour" (dole je návod, jak na to) / 160g cake flour
1/2 lžičky prášku do pečiva / 1/2 tsp baking powder
špetka soli / pinch of salt
1 lžička vanilkového extraktu / 1 tsp vanilla extract

frosting

230g másla, v pokojové teplotě / 230g butter, in room temperature
120g ricotty / 120g ricotta cheese
250g moučkového cukru / 250g powdered sugar
1 lžička vanilkového extraktu / 1 tsp vanilla extract
kůra z jednoho citronu / zest from one lemon
šťáva z půlky citronu / juice from 1/2 lemon

postup / process

1. Nachystejte si všechny potřebné ingredience, to ušetří spoustu času. Předehřejte si troubu na 180 C. V menší míse rozmixujte bílky s jednou třetinou kefíru a citronovou kůrou.

EN: Prepare all your ingredients ahead. It will save you a lot of time. Preheat your oven to 180 C. In a small bowl, mix the egg whites with 1/3 of kefir and zest from lemon.

2. V jiné, větší, míse romixujte máslo s cukrem, asi 3 minuty, dokud nevznikne krémová hmota. Potom přidejte prosátou mouku se solí a práškem do pečiva, zbytek kefiru, extrakt a bílkovou hmotu. Mixujte, dokud nevznikne nadýchané těsto (1-2min)

EN: In different, bigger, bowl, mix together sugar and butter until creamy, then add sifted cake flour with banking powder and salt, then add rest of kefir, extract and egg white mixture. Mix until the batter is fluffy and airy (1-2 minutes)

3. Naplňte papírové/silikonové košíčky trošičku nad polovinu a dejte do trouby na cca 15-16 minut. Potom vytáhněte a nechte ještě tak deset minut dojít ve formě a potom nechte kompletně vychladnout.

EN: fill the cupcake cups/silicone cups just above half of the cup and put into the oven for about 15-16 minutes. Then remove from oven and let it rest in the form for about 10 minutes. Then let them cool completely.

4. Zatímco cupcaky chládnou, můžete si připravit frosting. Nejdřív rozmixujte máslo, alespoň 5 minut. Potom přidejte ricottu, znovu mixujte alespoň 2 minuty. Postupně přidávejte prosátý cukr s citronovou šťávou a kůrou. Můžete přidat i vanilkový extrakt.

EN: While the cupcakes are cooling, you can prepare frosting. First, beat the butter, for about 5 minutes. Then add ricotta and mix for another 2 minutes. Gradually add sifted powdered sugar and juice and zest from a lemon. You can also add vanilla extrakt

5. Můžete ozdobit marcipánovýma kytičkama nebo cukrovýma ozdobama, posypte je kososem a nebo je nechte jen tak. Dobrou chuť :).

EN: You can decorate your cupcakes with marzipan flowers, sugar sprinkles, coconut or just leave them as they are. Enjoy! :)

 

 

 

 

Jak vyrobíte "cake flour" / How to make "cake flour"

- Už jsem spoustukrát viděla recepty s tzv. "cake flour" a vždycky jsem je pak radši nepužila, protože jsem byla líná si hledat, co to vlastně ta "cake flour" je a nebo jak se dá vyrobit doma. A ono je to přitom extrémně jednoduché! Z každých 100g hladké mouky jednu lžíci (mouky) oddělejte a nahraďte jí kukuřičným škrobem. Pak to spolu promíchejte a to je vše! Takže, když je v tomto receptu 150g "cake flour", tak ze sto gramů oddělejte lžícky mouky a z padesáti lžičku (nebo půl lžíce) a nahraďte ji kukuřičným škrobem :)

EN: Cake flour is obviously very typical in american recipes and even though I´ve seen it (in recipes) many times, I was always lazy to look for the instruction on how to actually make it at home. But it´s really easy! For every 100g of plain flour, take one tablespoon (of flour) out and replace it with the corn starch and mix it together. Easy as that! So for 150g of cake flour in this recipe, you need to replace one and half tablespoons of flour with corn starch. :)
